Seakayaker Oatcakes

1 cup butter
1 cup shortening
1 cup brown sugar
1 cup white sugar
1 cup white flour
1 cup whole wheat flour
6 cups oats (Newfoundland best)
¼ cup water if you need it (only if too dry to combine)
pinch of salt,
cinnamon,
maybe nutmeg

Melt the fat, mix the dry, then mix them together. Press into 2 greased 10x13in pans and bake at 350 F for 15 min, or until edges are lightly browned. Important: cut the cakes into bars while hot, and then cool mostly before removing. You can recut the lines to help remove them.

Ocean Everything Cookies

(World’s Very best cookie)

1 cup butter
1 cup brown sugar
1/2 cup white sugar
1 egg
1 tsp vanilla OR 1 tsp instant coffee granules
1 cup white flour
½ cup whole wheat flour
1 tsp baking soda 2 cups oats
½ tsp cinnamon
¼ tsp each nutmeg, ginger, all spice
2 tbsp poppy seeds (really, they rock).
1 ½ cups gorp (peanuts, almonds, raisins, granola, craisins, etc) (1/2 fruit/1/2 nut)
1 cup chocolate chips

Cream the butter and sugar, beat in the egg, add the vanilla or coffee. Mix the dry, stir them into the butter/sugar. Stir in the chunks. Make firm balls, and flatten on ungreased tray. Bake 350 for 8-12 minutes, until just browned. Remove from tray to rack right away and for softer cookies, pack the babies up after only 10 minutes of cooling.

Camping Chocolate Cake

1 ½ cups flour
1 cup white sugar
¼ to ½ cup cocoa
1tsp baking soda
½ tsp salt
1/3 cup oil
1 tsp vinegar
1 cup water
1 cup chocolate chips

Sift the dry, mix the wet, mix ‘em together. Lightly. Pour into greased 8x8inch pan and bake 350F for 30min. Freezes well for trips! (Vegan too!)
